Char grill operating instructions

We have 2 types of char grill being used throughout the branches one being the usual one is the electric model the second not used in as many branches is the gas version.

 

Start-up electrical char grill

  • Fold elements down into base

  • Insert back safety surround plate

  • Put cast iron griddle plates into place

  • Ensure the drain valve is closed and add water up to just below the maximum water level mark at the back.

  • Switch on the power supply - the green neon illuminates to indicate power to the appliance. Set the control knobs to the required position.

  • Allow 15 minutes for the chargrill to warm up.

  • Depending on model there could be up to 4 different controls for the independent elements, use these dials to operate the temperature of the grill, fully clockwise is the hottest temperature but once hot turn down so as to cook the products evenly and fully through without burning

  • Do not allow the water level to fall below minimum, as this will result in the inconvenience of the safety thermostat operating, cutting off the power supply to the appliance. The thermostat may only be reset when the appliance has cooled by pressing the red button located in the rear panel.

  • If the appliance is not to be used for some time, lightly coating the grids with cooking oil will help protect them.

 

Gas chargrill

 

Set back up grill

  • Insert back safety surround plate

  • Ensure charcoal (if Using) is clean and well distributed.

  • Put cast iron griddle plates into place

  •  

Lighting Pilot Burner

  • Depress gas control knob and rotate anti-clockwise to the ‘PILOT’ position.

  • With gas control knob depressed, press piezo igniter until pilot burner ignites. (Each operation of the piezo igniter button will generate a single spark). Pilot ignition can be viewed through the view hole or by looking through the grill from the top.

  • Hold in the gas control knob for approximately 10-15 seconds, then release. Pilot burner should remain alight. (If not repeat Items 2 and 3 above).

  •  

Lighting Main Burner

  • Turn gas controls anti-clockwise to first stop (‘FULL’ flame position) and allow the chargrill to heat up to operating temperature.

  • ‘LOW’ flame can be selected by depressing the gas control knob and rotating fully anti-clockwise.

  • For intermediate heat, position the gas control knob between ‘HIGH’ and ‘LOW’ positions for the desired heat setting.

  • During idle periods, main burners can be turned down to maintain a suitable plate temperature or gas controls can be set to ‘PILOT’ position as required.

  •  

NOTE:

  • Always set the gas control knob to ‘HIGH’ position when lighting main burners.

  • If pilot burner goes out during normal operation, wait 5 minutes before attempting to re-light the pilot burner.

 

Char grill Cleaning instructions

We have 2 types of char grill being used throughout the branches one being the usual one is the electric model the second not used in as many branches is the gas version. Both versions will need nightly deep cleaning.

Clean the chargrill regularly. A clean chargrill looks better, will last longer and will perform better.

Carbonised grease on the cooking surface or on the chargrill will hinder the transfer of heat from the

cooking surface to the food. This will result in a loss of cooking efficiency.

 

NOTE:

DO NOT use abrasive detergents, strong solvents or caustic detergents as they could corrode or damage the chargrill.

 

To prevent rust forming on the chargrill, ensure that any detergent or cleaning

material has been completely removed after each cleaning. Appliance should be

switched on briefly to ensure chargrill becomes dry. Spread a thin coat of oil or

grease over chargrill surface to form a protective greasy film.

 

During service cleaning:

  • The grease tray should be regularly emptied and cleaned on the gas version

  • On both versions the grill grates should be brushed down with a wire brush after every cooking session to get rid of burnt on debris and prevent this sticking to the next batch

  • Wipe all exterior areas of the grill with a damp cloth to keep clean and free of spills (care surfaces will be hot)

  • Clean tongs between each cooking session to prevent build up on tongs

  •  

Warning

Always turn ‘Off’ the gas / electricity supply before cleaning.

The appliance is not water proof.

Do not use water jet spray to clean interior or exterior of this appliance.

 

Nightly cleaning:

Electric chargrill

 

  • Allow the water temperature to cool. Fit the drain tube to the valve and drain the water into a suitable container.

  • To clean the appliance, lift off the cooking grids ensuring they are not dragged across the element (send these to pot wash to clean).

  • Remove the splashguard and then lift and swing the element into the upright position until the element stay engages.

  • Clean the tank with soapy warm water then rinse out with clean water

  • Clean all exterior areas with de-greaser and cloth, then spray with sanitiser and dry with paper roll

  • Deposits on the cooking grids may be cleaned off with a wire brush, and hot soapy water, if in really bad shape they can be soaked overnight with hot water and detergent, then cleaned 1st thing and put back on grill.

 

Gas Chargrill

 

  • Crumb tray should be checked and emptied frequently to prevent overflow and spillage. Remove crumb tray while still warm so that the grease is in a liquid state. Empty any grease from trays and wash thoroughly in same manner as any cooking utensil.

  • Remove grates and radiants and thoroughly clean splash back, interior and exterior surfaces of the chargrill with hot water, a detergent solution and a soft scrubbing brush. (grates and splashback can be sent to pot wash for cleaning)

  • Brush chargrill surface with a wire bristled brush. Any carbon deposits should be removed using a scraper tool, if in really bad shape they can be soaked overnight with hot water and detergent, then cleaned 1st thing and put back on grill.

  • Dry the chargrill thoroughly with a blue roll.

 

Grates (Cast Iron)

  • Clean grates thoroughly with a wire brush or a flexible spatula.

  • A scraper tool can be used to remove stubborn carbon and deposits.

  • Clean with hot water, a recommended detergent solution and a scrubbing brush. Dry all components thoroughly with a dry cloth.

  • Switched the chargrill ‘On’ briefly to ensure grates become dry.

  • Spread a thin film of cooking oil over grates to form a protective film.

 

Radiants (Cast Iron)

  • Clean radiants thoroughly with a wire brush or a flexible spatula.

  • A scraper tool can be used to remove stubborn carbon and deposits.

  • Clean with hot water, a mild detergent solution and a scrubbing brush. Dry all radiants thoroughly with a dry cloth.
